Let’s Decorate Pumpkin Patch Cupcakes!

Use a spatula to ice the tops of the cupcakes with chocolate icing. We used a store bought pre-made icing, but if you have time, you could make your own. We like this recipe from Lyne at Ottawa Mommy Club.

How to decorate Campfire Cupcakes:

  • First, make cupcakes using your favourite chocolate cake recipe.
  • Once the cupcakes have cooled, break pretzel sticks in half and push them into the cupcakes, creating logs for the fire. Six pretzel pieces look great.
  • Using a delicious buttercream icing (our recipe is at the end of this page), create three equal portions of icing.

First, make cupcakes using your favourite chocolate cake recipe. We like this one from Vegan Huggs. While they are baking and cooling, let’s begin to make the fiery icing!

Using a delicious buttercream icing (our recipe is at the end of this page), create three equal portions of icing. Add food colouring to each portion to make one red, one orange and finally, one yellow. We strongly recommend using gel colouring over the liquid type. The gel will give more vibrant colours and will not change the consistency of the icing.

Place the colours in a single line on top of a piece of saran wrap. One line per colour, side by side.

Carefully roll the icing into a log shape.

Easy and Quick Fourth of July Strawberry Dessert

This week we are bringing you a delicious, easy to make strawberry parfait. As a holiday blog we love everything festive and this recipe certainly checks all the boxes – the strawberries, jello, cream and blueberries give it the perfect red, white and blue look.

Ingredients

Jelly layer

  • 1 pkg Hartley’s Strawberry Jelly
  • 250 mls boiling water
  • 250 mls cold water

Pudding layer

  • 1 pkg instant vanilla pudding
  • 2 cups milk
  • 2 cups whipped topping

Fruit layer

  • fresh strawberries sliced
  • fresh blueberries

Instructions

Jelly layer

  • In a bowl, add boiling water to the jelly, stir until dissolved, add the cool water, stirring until well mixed.
  • Place in the fridge for 45min or until set.

Pudding layer

  • With the electric mixer, prepare the instant pudding by adding 2 cups of water to the powder and mix until small peaks develop (about 5min).
  • Add in 2 cups of whipped topping, mix with the electric mixer until well blended, set aside.

Layering

  • Begin to layer the ingredients, two-three spoonfuls at a time into a tall clear glass.
  • Start with some of the firm jelly, then add the pudding layer, finally add the sliced strawberries. Continue to alternate until the glass is full.
  • Top with blueberries!

    • In a mixing bowl, combine powdered sugar, natural peanut butter, melted butter, graham cracker crumbs, honey and salt. Using a mixer, mix until smooth and thoroughly combined.
    • Use a spoon and your hands to form the dough into balls about the size of a ping pong ball and place onto the prepared baking sheet.
    • In a separate bowl, mix together the melted chocolate and oil and stir until smooth.
    • Use two forks to dip the balls into the chocolate and roll to cover completely. Place the covered snowballs back onto the baking sheet.
    • Top with sprinkles and refrigerate for 15 minutes.

    • 1 Lemon wedge
    • 4 oz Black vodka
    • 8 oz Clamato

    • ¼ tsp Black pepper
    • ¼ tsp Paprika

    • 6-8 Cocktail onions
    • Food colouring Red and a dark colour

    Instructions

    • Pour the clamato juice into a cocktail shaker.
    • Add the spices, hot sauce, Worcestershire sauce, the juice from a lemon wedge, and horseradish to the shaker.
    • Put the lid on the shaker and mix until thoroughly combined (about eight shakes).
    • Add ice or ice stones to a cocktail glass.
    • Pour mixed cocktail on top of the ice.
    • Thread three or four onions onto skewers.
    • Use a toothpick to dab food colouring onto the onions – creating a dark 'iris' in the centre.
    • Use a different toothpick to add red 'bloodshot' effects to the area around the 'iris'. Try using some of the pickle juice on top of the red dye to water is down and create a more organic look.
    • Add the eyeball garnish to your Scary Caesar and enjoy!

    Make the chocolate cupcake batter using the recipe below. Line a muffin tin with liners and then fill with each cup with three generous tablespoons of batter.

    • 4 cups Powdered sugar
    • 2 tbsp Milk
    • 2 tsp Peppermint extract

    Instructions

    Cupcakes

    • Preheat oven to 350°.
    • Fill a muffin tin with cupcakes liners.
    • In a mixing bowl, sift together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
    • In a separate bowl, whisk together eggs, coffee, cream, oil and vanilla.
    • Pour the coffee mix into the dry mixture and mix until thoroughly combined (about 2 mins).
    • Add three generous tablespoons of batter to each cupcake liner.
    • Bake 20-25 minutes. Let cool completely before decorating.

    Peppermint Frosting

    • In a mixer, cream together butter and shortening.
    • Beat in the peppermint extract and combine thoroughly.
    • Add the powdered sugar, one cup at a time, until fully mixed into the butter mixture.
    • Add the milk and beat until light fluffy.
