How to make Spiced Rum Cupcakes:

  • Combine the dry ingredients in a large mixing bowl.
  • Mix together the milk, oil, vanilla and eggs in a medium bowl.
  • Combine the milk mixture with the dry ingredients and mix thoroughly.
  • Add spiced rum into the batter and mix.
  • Pour the batter into cupcake liners placed in a baking pan, about 2/3 full.
  • Bake at 350 for 15-17 mins. Let cool in the pan for 10 mins after removing from oven and then cool completely on a cooling rack.

Easy Spiced Rum Cupcakes Tutorial:

First, combine the dry ingredients in a large mixing bowl.

Then, in a medium bowl, mix together the milk, oil, vanilla and eggs.

Pour the wet ingredients into the dry and mix thoroughly.

Add the spiced rum into the batter and mix until well blended.

Finally, pour the batter into cupcake liners laid in a baking pan. Fill the liners about 2/3 full.

Bake at 350°F for 15-17 mins. Let cool in the pan for 10 mins after removing from the oven and then cool completely on a cooling rack before decorating.

Using an electric mixer, combine the butter, cinnamon, vanilla and spiced rum.

Slowly add powdered sugar and then add water as needed to get to the right consistency (it should be stiff but pliable).

Next, colour half of the icing blue. Place both icing colours into piping bags. The light coloured icing with a large tip and the blue icing with a smaller tip.

Pipe two swirls on each cupcake using the light-coloured icing. Then pipe zig-zag lines with the blue icing.

Ingredients
  

  • 2 1/2 cups Flour 2
  • 2 cups Sugar
  • 3 tsp Baking powder
  • 1 tsp Salt
  • 1 cup Milk
  • 1/2 cup Vegetable oil
  • 1 tbsp Vanilla
  • 2 Eggs
  • 1/2 cup Spiced rum

Spiced Rum Icing

  • 1 cup Butter softened
  • 1/2 tsp Cinnamon
  • 3 tbsp Spiced rum
  • 1 tbsp Vanilla
  • 4 cups Powdered sugar

    Instructions
     

    • Preheat oven to 350° and line a muffin pan with cupcake liners
    • Add flour, sugar, baking powder and salt to a large mixing bowl and combine
    • Add milk, vegetable oil, vanilla, and eggs to a medium sized bowl and combine
    • Add the wet ingredients to the dry and mix until well combined
    • Slowly add the spiced rum to the batter until combined
    • Fill the cupcake liners about 2/3 of the way full and bake for 15-17 minutes
    • Remove the cupcakes from the oven and allow to cool in the pan for about 10 minutes and then transfer to cooling racks to cool completely

    Spiced Rum Icing

    • Beat the butter and cinnamon with an electric mixer until smooth
    • Add the powdered sugar a little at a time until it is all mixed in
    • Add the vanilla and spiced rum (and water as needed) until icing is smooth
