Festive Strawberry Grinch Mini Cheesecakes

Equipment

  • 12 cup muffin tin
  • 12 muffin liners

Ingredients

For the crust

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 3 tbsp butter  melted

For the cheesecakes

  • 16 oz cream cheese  softened to room temp.
  • 1/2 cup sugar
  • 1 1/2 tbsp flour all purpose
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 8 drops food colouring gel

For the tops

  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar
  • 12 strawberries both ends cut flat

Instructions

  • Preheat the oven to 350F. Place paper muffin liners into the muffin tin.
  • In a small bowl, combine the graham crumbs with melted butter and sugar.
  • Evenly divide mixture among the 12 muffin cups, press the mixture down firmly. Bake for 5min, then set aside.
  • In a large bowl, beat together softened cream cheese, sugar, eggs, and vanilla, sour cream and heavy cream one at a time until smooth. Add in about 8 drops of green food colouring (amount may vary), the mixture should be "Grinch" green!
  • Using a medium spoon, pour the mixture evenly over crusts (one heaping spoonful)
  • Bake at 350 degrees for 15 – 20 minutes or until just set in the middles.
  • Allow cheesecakes to cool in the tins until they reach room temperature. Then transfer them to the refrigerator to chill overnight, or until chilled through (about 12 hours)
  • In a medium bowl, beat the powdered sugar and heavy cream together until stiff peaks form. Place it in the refrigerator until ready to use
  • Cut the strawberries on both end to create flat ends
  • Carefully remove the cheesecakes from the liners. Place them on a serving dish, top with whipped cream and strawberries! Create the Grinch's hat by adding a whipped cream pom pom on the top of the strawberries.

Or do you have a mantel but don’t have enough stocking holders? We can help! This week we are excited to show you our fun DIY Christmas Stocking Holder! This blog post may contain affiliate links. This cute wooden Christmas stocking holder is perfect for homes with or without a traditional fireplace mantel. This tutorial shows how to make a stocking holder that stands on the floor, but you can also make it hang on the wall by attaching a wall hanger to the back! Either way, it will look and work great! Two ways to make this stocking holder! What do you need to make a Christmas Stocking Holder? Banister Post (check out your local restore!) (4) 4” x 5” wooden boards (to hold the banister up) Large Wooden Board Red, White, and Green Acrylic Paint Red Spray Paint Hanging Hooks Nails Hammer Ruler Pencil Ribbon (Optional) Glitter (Optional) Embellishments (Optional) Glue (For Embellishments) Hot Glue Gun (For Ribbon) How do you make a stocking holder? Firstly, spray paint the banister post and the four base pieces according to the directions on the can. Allow the spray paint to dry after every coat, it may take several coats to complete, once finished set them aside.    Project Tip: You can find a banister railing at your local restore, you may even get lucky and find one that’s already painted white.    Next, paint the face of the main board with red acrylic paint; you’ll likely need more than one coat. Once dry, paint the back of the board and the outer edge.    Almost done making your own DIY Wood Christmas Stocking Holder! Once the face board is completely dry, measure and lightly draw a line to use as a guideline for your lettering. Be sure not to press too hard with or it will dent the board. Freehand the letters or use a stencil. For those who have one, this can be a great opportunity to use your Cricut! Glitter can be added to the letters after the paint dries by tracing the letters with glue. To finish the main board off, screw in the hooks. Space them out equally, using the ruler and pencil to measure and mark where they will go across the bottom of the board.  Finally, construct the holder by nailing the four pieces of wood to the bottom of the post, acting as feet. One piece of wood for each side of the pole. At the top, nail the main board using two or three nails.   Get creative and add ribbon to the post, sparkling stickers, jewels, snowflakes and more to the main board! This cute wooden Christmas stocking holder is perfect for homes with or without a traditional fireplace mantel. This tutorial shows how to make a stocking holder that stands on the floor, but you can also make it hang on the wall by attaching a wall hanger to the back! Either way, it will look and work great!

What do you need to make a Christmas Stocking Holder?

  • Banister Post (check out your local restore!)
  • (4) 4” x 5” wooden boards (to hold the banister up)
  • Large Wooden Board
  • Red, White, and Green Acrylic Paint
  • Red Spray Paint
  • Hanging Hooks
  • Nails
  • Hammer
  • Ruler
  • Pencil
  • Ribbon (Optional)
  • Glitter (Optional)
  • Embellishments (Optional)
  • Glue (For Embellishments)
  • Hot Glue Gun (For Ribbon)

How do you make a stocking holder?

Firstly, spray paint the banister post and the four base pieces according to the directions on the can. Allow the spray paint to dry after every coat, it may take several coats to complete, once finished set them aside.   

Project Tip: You can find a banister railing at your local restore, you may even get lucky and find one that’s already painted white.

Next, paint the face of the main board with red acrylic paint; you’ll likely need more than one coat. Once dry, paint the back of the board and the outer edge.   

Almost done making your own DIY Wood Christmas Stocking Holder!

Once the face board is completely dry, measure and lightly draw a line to use as a guideline for your lettering. Be sure not to press too hard with or it will dent the board.

Freehand the letters or use a stencil. For those who have one, this can be a great opportunity to use your Cricut!

Glitter can be added to the letters after the paint dries by tracing the letters with glue.

To finish the main board off, screw in the hooks. Space them out equally, using the ruler and pencil to measure and mark where they will go across the bottom of the board. 

Finally, construct the holder by nailing the four pieces of wood to the bottom of the post, acting as feet. One piece of wood for each side of the pole. At the top, nail the main board using two or three nails.

Give your front lawn a little shine this Christmas and create some amazing ice globe Christmas lights! Once they’re all done be sure to add a tea light underneath to create beautiful ice luminaries. Not only is this craft great for the holidays, it’s a really fun DIY science experiment for the kids. Students, preschoolers, toddlers and school aged kids will all love watching these snow globes go from water to ice. And the designs created from the food colouring is an added surprise! These ice globes are definitely a fun STEM activity. What you’ll need: Balloons Water Food colouring COLD WEATHER! Battery operated tea lights (optional) How to Make Ice Globes – Christmas Lights in the Snow Firstly, add some food colouring to the balloon. The more you put the darker the colour will appear when it’s frozen and the more it will look like a Christmas light (using food colouring will be messy!!). Add the water next.  You will have to cover most of your tap with the balloon to fill it, otherwise there won’t be enough force to fill the balloon enough.  Fill them until you are happy with their size, remembering that they need to be carried outside when done. We found the size of two hands together is perfect. Tie them up when full.   Secondly, bring them outside in the snow.  If they are small they will be easy to lift out and will remain round if placed in some powdery snow but if they are on the bigger side, don’t worry, they will stand out even more!   Once they are frozen you can bring them inside and peel off the balloons, this is surprisingly easy, it’s amazing to see the patterns inside from the air and food colouring!  Finally, give them a wipe with a wet paper towel to make them sparkle.  Your Christmas light ice globes are ready! How to Make Ice Globes - Christmas Lights in the Snow

Not only is this craft great for the holidays, it’s a really fun DIY science experiment for the kids. Students, preschoolers, toddlers and school aged kids will all love watching these snow globes go from water to ice. And the designs created from the food colouring is an added surprise! These ice globes are definitely a fun STEM activity.

What you’ll need:

  • Balloons
  • Water
  • Food colouring
  • COLD WEATHER!
  • Battery operated tea lights (optional)

Firstly, add some food colouring to the balloon. The more you put the darker the colour will appear when it’s frozen and the more it will look like a Christmas light (using food colouring will be messy!!). Add the water next.  You will have to cover most of your tap with the balloon to fill it, otherwise there won’t be enough force to fill the balloon enough.  Fill them until you are happy with their size, remembering that they need to be carried outside when done. We found the size of two hands together is perfect. Tie them up when full.  

Secondly, bring them outside in the snow.  If they are small they will be easy to lift out and will remain round if placed in some powdery snow but if they are on the bigger side, don’t worry, they will stand out even more!

Once they are frozen you can bring them inside and peel off the balloons, this is surprisingly easy, it’s amazing to see the patterns inside from the air and food colouring!

Finally, give them a wipe with a wet paper towel to make them sparkle.  Your Christmas light ice globes are ready! Place them back outside and watch them shine.

What you’ll need to make Handprint Christmas Art for Kids:

  • Canvas
  • Paint – gray, white, yellow, black, green, red
  • Paint brushes
  • Wood circle
  • Glue

Painting a canvas with gray paint by Champagne and Sugarplums
