New Year’s Celebration Champagne Cake

Champagne cake is a great dessert for any celebration – but its especially good for New Years Eve. There is just something about champagne that screams celebration! (We think maybe the bubbles…) It pairs best with a buttercream icing and we’ve included an adapted version of our almond buttercream which is perfect with this cake.

It being the end of 2020, you’ll probably be celebrating at home this year with limited or even no guests, but that doesn’t mean we shouldn’t do something special to say goodbye this dumpster fire of a year! And since welcoming 2021 should be as easy as possible, we made this cake with boxed cake mix – don’t worry though – no one will ever guess.

What You’ll Need:
  • Box of vanilla cake mix
  • Eggs
  • Champagne
  • Powdered sugar
  • Vegetable shortening
  • More champagne
  • An electric mixer
  • Two 6 or 8 inch baking pans

New Year’s Celebration Champagne Cake

Preheat the oven to 350 and then grease the two cake pans. We used two 6 inch pans for our cake – two 8 inch pans will work well here as well.

Place cake mix, eggs and then champagne into a mixing bowl and mix for 1-2 minutes until combined.

Bake for 20-30 minutes (follow the recommended timings on the cake box for the size of pan you are using).

Beat together the sugar and shortening until combined and smooth.

Add the champagne, a bit at a time, until the proper consistency is reached (thin for icing the cake and medium for piping the decorations).

Use a long knife to cut the tops off of the baked cakes.

Add a layer of icing on top of one cake and then place the second cake on top of the icing.

Ice the cake by covering the entire cake in a thin layer of icing (the crumb layer), and then follow this with a second layer of icing until smooth.

Decorate the cake with varying sizes of rosettes and stars, glitter sprinkles, and silver balls.

  • 1 box Vanilla cake mix
  • 3 Eggs
  • 1 1/4 cup Champagne

Buttercream Icing

  • 4 cups Powdered sugar
  • 1 cup Vegetable shortening
  • 1/4 cup Champagne

  • Preheat the oven to 350
