Line a muffin tin with liners and then fill with each cup with three generous tablespoons of batter. Bake the cupcakes in the oven for about 20 mins. In an electric mixer, cream together butter and vegetable shortening. We chose to use shortening in this frosting recipe, opposed to all butter, because we wanted to get a real white frosting. Chocolate Cupcakes with Peppermint Frosting

Make the chocolate cupcake batter using the recipe below. Line a muffin tin with liners and then fill with each cup with three generous tablespoons of batter.

Bake the cupcakes in the oven for about 20 mins.

In an electric mixer, cream together butter and vegetable shortening. We chose to use shortening in this frosting recipe, opposed to all butter, because we wanted to get a real white frosting. Using all butter will taste a little bit better, but will make a more cream colour frosting.

Add powdered sugar, one cup at a time and mix well.

Divide the frosting in half and colour one bowl green. We recommend using a gel food colouring as the liquid kind can dilute the texture of the frosting.

Transfer the frosting in two lines onto plastic wrap and then roll into a log. You could also use a spatula to fill a piping bag directly with the two colours of icing. It’s a little bit of a messier method but works just as well.

Ingredients

Cupcakes

  • 1 3/4 cups Flour
  • 2 cups Sugar
  • 3/4 cup Unsweetened Cocoa powder
  • 2 tsp Baking soda
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 2 Eggs
  • 1 cup Brewed coffee
  • 1 cup Heavy cream Thicker milk can be used as a substitute
  • 1/2 cup Vegetable oil
  • 1 tsp Vanilla extract

Peppermint Frosting

  • 1/2 cup Butter
  • 1/2 cup Vegetable shortening
  • 4 cups Powdered sugar
  • 2 tbsp Milk
  • 2 tsp Peppermint extract

Instructions

Cupcakes

  • Preheat oven to 350°.
  • Fill a muffin tin with cupcakes liners.
  • In a mixing bowl, sift together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • In a separate bowl, whisk together eggs, coffee, cream, oil and vanilla.
  • Pour the coffee mix into the dry mixture and mix until thoroughly combined (about 2 mins).
  • Add three generous tablespoons of batter to each cupcake liner.
  • Bake 20-25 minutes. Let cool completely before decorating.

Peppermint Frosting

  • In a mixer, cream together butter and shortening.
  • Beat in the peppermint extract and combine thoroughly.
  • Add the powdered sugar, one cup at a time, until fully mixed into the butter mixture.
  • Add the milk and beat until light fluffy.

How do you make St. Patrick’s Day Rainbow Truffles?

This recipe is so easy to make, only requires a few ingredients and it’s no-bake! You will need a food processor and a microwave to make this dessert. Simply put the golden Oreo cookies into a food processor and pulse them until they are crumbs (don’t remove the cream). Then, in a separate bowl, add the softened cream cheese and mix until smooth. Next, divide the mixture into 5 equal parts and add a different colour of food colouring to each. Blend until the colour is solid. Keep reading for the final touches!

  • 36 golden Oreo cookies
  • 8 oz cream cheese softened to room temperature
  • 2-3 drops food colouring in red, yellow, green, blue, purple gel
  • 16 oz white chocolate
  • 16 oz dark chocolate
  • Rainbow sprinkles

Instructions

  • Line a baking sheet with parchment paper.
  • Put 36 Oreos into a food processor. Use the whole cookie, do not remove the cream filling. Pulse the cookies until they become fine crumbs.
  • Place crumbs into a mediums sized mixing bowl. Add the softened cream cheese and blend until mixed.
  • Separate the mixture into five balls. Add one colour of gel food colouring to each ball and mix with a spatula.
  • Roll each ball into a log and place on parchment paper. Add the logs on top of one another until all colours are added. Roll the parchment paper and chill in the refrigerator for 5 min.
  • Remove from the fridge and unroll. Using a tablespoon, scoop the mixture and form 1 inch balls. Continue until all of the dough has been used. Place the rainbow Oreo balls in the freezer for 15 minutes.
  • While the desserts are chilling, melt the white and dark chocolate (separately) according to directions on package.
  • Take the Oreo balls out of the freezer and dip them into the melted chocolate using a spoon. Coat each ball completely with chocolate and return to the baking sheet.  
  • The chocolate will dry quickly so sprinkle the rainbow sprinkles immediately, then allow chocolate to set. 
  • Store in an airtight container in refrigerator.

Serving Suggestions

This drink is usually served in an old fashioned glass or rocks glass but will also look cute in a coupe glass! Because we are making this a Pink Amaretto and Cream, a Valentine’s rim such as clear, pink or red sugar crystals, or even heart shaped sprinkles would definitely give it a special touch.

How to Rim a Cocktail Glass

  1. This is super simple and looks so good! Firstly, fill a shallow dish or bowl with water, lime or lemon juice.
  2. Secondly, carefully dip a small, clean sponge into the liquid and spread the juice onto the glass.
  3. Dip the glass into another shallow dish or bowl filled with the rim of your choice

How to make a Pink Amaretto and Cream Cocktail:

  • Add 1.5 oz of amaretto and 1.5 oz of heavy cream to crushed ice in a cocktail shaker

Firstly, arrange the popsicle sticks into a square, with the horizontal sticks sitting on tope of the vertical ones. Add the other four so there are two popsicle sticks on each side (see picture)

Secondly, glue the sticks into place and set them aside to dry

Once the glue has dried, paint the popsicle sticks using the Q-Tips. Dip one end of the Q-Tip into the paint and place dots around the frame. It’s always fun to see what design each child creates.

While the popsicle stick frame is drying, cut a heart out of card stock. Once the paint has dried, glue it to the card stock heart to create a frame “backing” to hold the photo or drawing.

We don’t know how much winter we can take, so it’s time to bring in some colour and cheer.  Luckily, this lucky signboard might just be enough to ward off those winter blues with traditional St. Patty’s green and a subtle rainbow touch. We painted our plank white, so the green would stand out better than would would against the natural wood. To give depth, we painted the plank green first and then a layer of white over-top. This way, we could sand away some of the white paint to give the sign a rustic, weathered look. There are a few ways to make the letters, free-hand like we did, stencils, or a Cricut machine. Let’s get sham-rockin and let greens, golds and rainbows dominate your decorations this March. What you’ll need: Wood plaque Scrapbook paper in green patterns Mod Podge and foam brush Scissors Ruler, stencil or Cricut machine Embroidery thread in a rainbow of colours Green and white acrylic paint Sandpaper Paint your plaque green. When this has completely dried, paint over the green with white paint. Be sure to let all of the paint layers dry completely before moving onto the next steps. If you don’t, the colours will smear together. After the white paint is dry, use the sandpaper to distress the plaque by rubbing away the white paint around the edges of the plaque. Cut out your letters while the paint layers dry. Use a stencil, Cricut machine or a ruler. Maybe try adding a second layer to add depth and flare. Use Mod Podge to attach the letters to the plaque. Seal them by applying a layer of the glue over the top of the letters as well. Cut lengths of various coloured embroidery thread or twine. Tie a knot in the middle and wrap them around one edge of the plaque, securing the threads at the back. What do you think of your lucky signboard?
