What do you need to make these cute desserts?

This recipe is made using a regular 12 cup muffin pan, the ones you make cupcakes in. That’s part of the ease with this recipe, we all have muffin tins and it will make delicious individual sized cheesecakes. You’ll also need some cupcake liners, they will be removed before serving.

You can make this dessert recipe in advance easily too. Just keep the cheesecakes in the refrigerator and add the cute strawberry hats just before serving.

How to make Festive and Fun Grinch Mini Cheesecakes

Festive and Fun Grinch Mini Cheesecakes by Champagne and Sugarplums

Preheat the oven to 350F.

Mix the graham cracker crumbs, sugar and melted butter together in a small bowl.

Spoon a small amount of the graham base mixture (about 1 tablespoon) into the 12 cup muffin tin, lined with cupcake liners. Be sure to press the base down firmly in each cup.

Bake for 5 min.

Secondly, beat the softened cream cheese, sugar, flour, eggs, and vanilla, sour cream, heavy cream one at a time, and green food colouring in a medium bowl until blended.

Divide the cheesecake filling mixture between each of the 12 graham bases, using a spoon. Bake for about 15-20 min. Allow them to cool.

*Baking tip* place the cooled cheesecakes in the refrigerator to chill overnight. This will allow the cheesecakes to completely set and firm, making them easier to eat and decorate!

Festive Strawberry Grinch Mini Cheesecakes

Delicious single serve mini cheesecakes with a Grinch inspired theme!

Equipment

  • 12 cup muffin tin
  • 12 muffin liners

Ingredients

For the crust

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 3 tbsp butter  melted

For the cheesecakes

  • 16 oz cream cheese  softened to room temp.
  • 1/2 cup sugar
  • 1 1/2 tbsp flour all purpose
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 8 drops food colouring gel

For the tops

  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar
  • 12 strawberries both ends cut flat

Instructions

  • Preheat the oven to 350F. Place paper muffin liners into the muffin tin.
  • In a small bowl, combine the graham crumbs with melted butter and sugar.
  • Evenly divide mixture among the 12 muffin cups, press the mixture down firmly. Bake for 5min, then set aside.
  • In a large bowl, beat together softened cream cheese, sugar, eggs, and vanilla, sour cream and heavy cream one at a time until smooth. Add in about 8 drops of green food colouring (amount may vary), the mixture should be "Grinch" green!
  • Using a medium spoon, pour the mixture evenly over crusts (one heaping spoonful)
  • Bake at 350 degrees for 15 – 20 minutes or until just set in the middles.
  • Allow cheesecakes to cool in the tins until they reach room temperature. Then transfer them to the refrigerator to chill overnight, or until chilled through (about 12 hours)
  • In a medium bowl, beat the powdered sugar and heavy cream together until stiff peaks form. Place it in the refrigerator until ready to use
  • Cut the strawberries on both end to create flat ends
  • Carefully remove the cheesecakes from the liners. Place them on a serving dish, top with whipped cream and strawberries! Create the Grinch's hat by adding a whipped cream pom pom on the top of the strawberries.

As a holiday blog, we love everything festive and this recipe certainly checks all the boxes – the strawberries, jello, cream and blueberries give it the perfect red, white and blue look. Holidays and baking go hand in hand and part of the fun is sticking to the “theme” by using some of our favourite ingredients. Lucky for us, berries are in season during the Fourth of July, so they’ll be full of flavour. Freshly picked strawberries and blueberries with vanilla cream certainly make for a tasty and festive dessert! Above all, this recipe is very easy to make, which is always important when holiday planning.  The longest part is waiting for the gelatin to set. Once the gelatin is firm all you need to do is layer the ingredients, one after the other creating those amazing red and white stripes. The tricky part…putting the cream in the glass without touching the sides! Lucky for us, berries are in season during the Fourth of July, so they’ll be full of flavour. Freshly picked strawberries and blueberries with vanilla cream certainly make for a tasty and festive dessert!

Above all, this recipe is very easy to make, which is always important when holiday planning.  The longest part is waiting for the gelatin to set. Once the gelatin is firm all you need to do is layer the ingredients, one after the other creating those amazing red and white stripes. The tricky part…putting the cream in the glass without touching the sides! Easy and Quick Fourth of July Strawberry Dessert

This week we are bringing you a delicious, easy to make strawberry parfait. As a holiday blog we love everything festive and this recipe certainly checks all the boxes – the strawberries, jello, cream and blueberries give it the perfect red, white and blue look.

Ingredients

Jelly layer

  • 1 pkg Hartley’s Strawberry Jelly
  • 250 mls boiling water
  • 250 mls cold water

Pudding layer

  • 1 pkg instant vanilla pudding
  • 2 cups milk
  • 2 cups whipped topping

Fruit layer

  • fresh strawberries sliced
  • fresh blueberries

Instructions

Jelly layer

  • In a bowl, add boiling water to the jelly, stir until dissolved, add the cool water, stirring until well mixed.
  • Place in the fridge for 45min or until set.

Pudding layer

  • With the electric mixer, prepare the instant pudding by adding 2 cups of water to the powder and mix until small peaks develop (about 5min).
  • Add in 2 cups of whipped topping, mix with the electric mixer until well blended, set aside.

Layering

  • Begin to layer the ingredients, two-three spoonfuls at a time into a tall clear glass.
  • Start with some of the firm jelly, then add the pudding layer, finally add the sliced strawberries. Continue to alternate until the glass is full.
  • Top with blueberries!

Our Blueberry Lemon Bars have the perfect crust that can actually be used to make some yummy shortbread cookies! This crust makes these bars easy to handle while complementing the lemon and blueberry flavours.

What ingredients do you need to make Blueberry Lemon Cheesecake Bars?

Crust

  • 1 cup butter melted
  • 1/2 cup sugar and some to sprinkle
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour

Cheesecake Filling

  • 225 g cream cheese softened to room temperature
  • 2 eggs
  • 150 g Greek blueberry yogurt
  • 1 cup sugar
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour

Topping

  • 1 cup lemon pie filling or make your own!
  • 3/4 cup fresh blueberries

Easy Lemon Blueberry Bars by Champagne and Sugarplums

How to make lemon blueberry bars:

One of the best parts of the holiday to-do list is baking. It’s something we love to do all together, including the kids. We so fondly remember getting in the kitchen and ‘helping’ mom and now we’re creating those same memories for our little ones. This blog post may contain affiliate links. What does that mean? There are so many tried and true recipes that are an annual must make. But every year we try a couple new recipes and this year we picked Natural Peanut Butter Snowballs to try out. In our homes we use natural peanut butter, so we used that to make these treats – and it worked perfectly – which gave us the natural title. They could really be considered more of a candy than baking really, but that doesn’t make them any less fun or tasty! The result? Amazing! A contender to be added to the yearly bake list. What you’ll need: Powered sugar All natural peanut butter (we used one that has honey mixed in which worked perfectly!) Butter, melted Graham cracker crumbs Honey Salt White chocolate or dark chocolate, melted Grapeseed oil Sprinkles Parchment or wax paper Mixer Natural Peanut Butter Snowballs Line a baking sheet with parchment or wax paper. In a mixing bowl combine powdered sugar, natural peanut butter, melted butter graham crackers crumbs, honey, and salt. Mix until smooth and thoroughly combined. Use a tablespoon and your hands to form the dough into balls and place them onto the prepared baking sheet. In a medium bowl, mix together melted chocolate and oil, stirring until smooth. Working fairly quickly, use two forks to dip the peanut butter balls in the chocolate, turning until fully covered. Drip excess back into the bowl and then transfer back onto the baking sheet. Top with sprinkles as you go. Decorating as you work will allow for the sprinkles to stick to the chocolate before it begins to harden. There are so many tried and true recipes that are an annual must make. But every year we try a couple new recipes and this year we picked Natural Peanut Butter Snowballs to try out. In our homes we use natural peanut butter, so we used that to make these treats – and it worked perfectly – which gave us the natural title. They could really be considered more of a candy than baking really, but that doesn’t make them any less fun or tasty! The result? Amazing! A contender to be added to the yearly bake list.

What you’ll need:
  • Powered sugar

In a mixing bowl combine powdered sugar, natural peanut butter, melted butter graham crackers crumbs, honey, and salt. Mix until smooth and thoroughly combined.

Use a tablespoon and your hands to form the dough into balls and place them onto the prepared baking sheet.

In a medium bowl, mix together melted chocolate and oil, stirring until smooth.

Working fairly quickly, use two forks to dip the peanut butter balls in the chocolate, turning until fully covered. Drip excess back into the bowl and then transfer back onto the baking sheet.

Natural Peanut Butter Snowballs

An easy, no bake treat made with natural peanut butter that is sure to become a family favourite!

Ingredients

  • 2 cups Powdered sugar
  • 1 1/2 cups Natural peanut butter
  • 1/3 cup Butter melted
  • 2/3 cup Graham cracker crumbs
  • 1 tbsp Honey
  • 1 tsp Salt
  • 2 pkgs White and/or dark chocolate melted
  • 2 tsp Grape seed oil coconut oil or nut oils can be used instead
  • Sprinkles

Instructions

  • Line a baking sheet with parchment or wax paper.
  • In a mixing bowl, combine powdered sugar, natural peanut butter, melted butter, graham cracker crumbs, honey and salt. Using a mixer, mix until smooth and thoroughly combined.
  • Use a spoon and your hands to form the dough into balls about the size of a ping pong ball and place onto the prepared baking sheet.
  • In a separate bowl, mix together the melted chocolate and oil and stir until smooth.
  • Use two forks to dip the balls into the chocolate and roll to cover completely. Place the covered snowballs back onto the baking sheet.
  • Top with sprinkles and refrigerate for 15 minutes.

Ingredients

  • 36 Golden Oreo cookies
  • 8 oz cream cheese softened to room temperature
  • 2-3 drops gel food colouring pink
  • 16 oz dark chocolate
  • pink sprinkles

Instructions

  • Line a baking sheet with parchment paper.
  • Put 36 Oreos into a food processor. Use the whole cookie, do not remove the cream filling. Pulse the cookies until they become fine crumbs.
  • Place crumbs into a medium sized mixing bowl. Add the softened cream cheese and blend until mixed.
  • Add pink gel food colouring to the mixture and mix with a spatula.
  • Roll the mixture in parchment paper and chill in the refrigerator for 5 min.in refrigerator.
  • Remove from the fridge and unroll. Using a tablespoon, scoop the mixture and form 1 inch balls. Continue until all of the dough has been used.
  • Place the pink Oreo balls in the freezer for 15 minutes. While the desserts are chilling, melt the dark chocolate according to directions on package.
  • Once chilled, remove the Oreo balls from the freezer and dip them into the melted chocolate using a spoon. Coat each ball completely with chocolate and return to the baking sheet.  The chocolate will dry quickly so sprinkle pink sprinkles immediately, then allow chocolate to set. 
  • Store in an airtight container.
