Campfire Rotini Pasta

Summer long weekends are the perfect time to take advantage of amazing weather and go camping. Camping stoves are handy for sure, but there’s nothing like cooking over the fire. Of course, we love the staples like sausages, taco in a bag and veggie dogs, but it’s also fun to mix it up with some easy, pre-made meals. Making a meal at home and then warming it up on the fire leaves plenty of time for hiking, swimming and a little fireside drinking. How to make a Campfire Rotini Pasta?
  • 4 cups Rotini pasta
  • 4 Italian sausages, cut into chunks
  • 1 Medium red onion, sliced
  • 1 Can tomato paste
  • 3 Sun-dried tomato halves, chopped
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Red-wine vinegar
  • 2 Garlic cloves, minced
  • 2 tbsp Olive oil
  • Chili flakes to taste 
  • ¼ cup Parmesan cheese

Steps:

1.Cook pasta as directed on package. Meanwhile, brown sausage in a large skillet.

2. While the pasta and sausages are cooking, mix together the sun-dried tomatoes, vinegar, garlic and olive oil  and chili flakes in a small bowl.

3. Drain the sausages and stir the onions and tomato paste into the skillet. Cook for 15 minutes, stirring occasionally.

4. Remove skillet from heat and stir in the vinegar mixture.

5. Toss sausage mixture with the cooked pasta. Transfer into a foil to go container for warming later.

6.Warm over the fire for about 15 minutes, keeping a close eye on it so it doesn’t burn. Add the Parmesan cheese before serving.
