Peel and thinly slice some cucumber and then place inside a cocktail shaker. Add 10 leaves of fresh mint.

Ingredients

  • Cucumber slices Peeled
  • 10 Mint leaves Plus extra for garnish
  • 1 oz Simple syrup
  • 1 oz Lime juice
  • 2 drops Green food colouring
  • Ice
  • 2 oz Gin
  • 3-4 oz Club soda

Instructions

  • Peel and slice some cucumber slices, about 10 is good. Place into a cocktail shaker.
  • Add mint leaves to the cocktail shaker and muddle until cucumber is soft and mint is fragrant.
  • Add ice, simple syrup, lime juice, food colouring and gin to the shaker.
  • Shake! Until the shaker feels chilled.
  • Strain into a highball glass.
  • Top up with club soda.
  • Add garnish and enjoy!

What you’ll need: Chocolate cupcakes (recipe below) Cupcake liners Peppermint buttercream frosting (recipe below) Piping bag Large star piping tip Green gel food colouring Mixer Muffin tin Chocolate Cupcakes with Peppermint Frosting Make the chocolate cupcake batter using the recipe below. In an electric mixer, cream together butter and vegetable shortening. We chose to use shortening in this frosting recipe, opposed to all butter, because we wanted to get a real white frosting. Using all butter will taste a little bit better, but will make a more cream colour frosting. Add powdered sugar, one cup at a time and mix well. Divide the frosting in half and colour one bowl green. We recommend using a gel food colouring as the liquid kind can dilute the texture of the frosting. Transfer the frosting in two lines onto plastic wrap and then roll into a log. You could also use a spatula to fill a piping bag directly with the two colours of icing. It’s a little bit of a messier method but works just as well. Place the plastic wrap frosting log into a piping bag, with a large star tip attached. Decorate the cupcakes with large twirls of frosting. Starting of the outside of the cupcake and pipe circles, moving inward, allowing the frosting to pile up on itself until you reach a peak. Chocolate Cupcakes with Peppermint Frosting

Make the chocolate cupcake batter using the recipe below. Line a muffin tin with liners and then fill with each cup with three generous tablespoons of batter.

In an electric mixer, cream together butter and vegetable shortening. We chose to use shortening in this frosting recipe, opposed to all butter, because we wanted to get a real white frosting. Using all butter will taste a little bit better, but will make a more cream colour frosting.

  • 1 3/4 cups Flour

  • 3/4 cup Unsweetened Cocoa powder

  • 2 Eggs
  • 1 cup Brewed coffee
  • 1 cup Heavy cream Thicker milk can be used as a substitute
  • 1/2 cup Vegetable oil
  • 1 tsp Vanilla extract

Peppermint Frosting

  • 1/2 cup Butter
  • 1/2 cup Vegetable shortening
  • 4 cups Powdered sugar
  • 2 tbsp Milk
  • 2 tsp Peppermint extract

Instructions

Cupcakes

  • Preheat oven to 350°.
  • Fill a muffin tin with cupcakes liners.
  • In a mixing bowl, sift together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • In a separate bowl, whisk together eggs, coffee, cream, oil and vanilla.
  • Pour the coffee mix into the dry mixture and mix until thoroughly combined (about 2 mins).
  • Add three generous tablespoons of batter to each cupcake liner.
  • Bake 20-25 minutes. Let cool completely before decorating.

Peppermint Frosting

  • In a mixer, cream together butter and shortening.
  • Beat in the peppermint extract and combine thoroughly.
  • Add the powdered sugar, one cup at a time, until fully mixed into the butter mixture.
  • Add the milk and beat until light fluffy.

It’s refreshing, minty and Christmassy too! This week we decided to elevate the classic bar shot and make it into a full blown grown up cocktail – the Polar Bear Martini. A beautiful blue sugar rim is essential when creating a fancy martini like this one – especially for the holidays.  The trick to making the sugar stay on the glass is to use a sticky liquid – like lemon juice – to really get full coverage and staying power. What you’ll need: Blue decorating sugar Lemon juice Vodka Ice Peppermint schnapps Crème de cacao Cocktail shaker Jigger Sponge Let’s make a Polar Bear Martini! Pour the blue decorating sugar onto a plate and then some lemon juice into a pinch bowl. Dip a small sponge into the lemon juice and then use it to liberally cover the rim of the glass. Turn the glass lined with lemon juice over onto the plate of sugar and then spin a few times until the rim is fully covered. Add some ice and then 1oz of vodka to the cocktail shaker. Next, add 1/2oz of Crème De Cacao to the shaker, and then 1/2oz of peppermint schnapps. Secure the lid tightly and shake to mix. You’re probably familiar with the Polar Bear Shot – a classic bar shot tossed back by pretty much everyone at some point in a dive bar in their 20’s. It’s refreshing, minty and Christmassy too! This week we decided to elevate the classic bar shot and make it into a full blown grown up cocktail – the Polar Bear Martini.

A beautiful blue sugar rim is essential when creating a fancy martini like this one – especially for the holidays.  The trick to making the sugar stay on the glass is to use a sticky liquid – like lemon juice – to really get full coverage and staying power.

What you’ll need:
  • Blue decorating sugar
  • Lemon juice
  • Vodka
  • Ice
  • Peppermint schnapps
  • Crème de cacao
  • Cocktail shaker
  • Jigger
  • Sponge

Let’s make a Polar Bear Martini!

Pour the blue decorating sugar onto a plate and then some lemon juice into a pinch bowl.

Dip a small sponge into the lemon juice and then use it to liberally cover the rim of the glass.

Turn the glass lined with lemon juice over onto the plate of sugar and then spin a few times until the rim is fully covered.

Add some ice and then 1oz of vodka to the cocktail shaker.

Next, add 1/2oz of Crème De Cacao to the shaker,

and then 1/2oz of peppermint schnapps.

Secure the lid tightly and shake to mix.

Polar Bear Martini

We've reinvented the classis shot – refreshing, minty and oh so Christmassy – into a grown up, classy cocktail.

Equipment

  • Cocktail shaker
  • Plate
  • Pinch bowl
  • Martini glass
  • Small sponge

Ingredients

  • 1 ounce Vodka
  • 1/2 ounce Crème de Cacao
  • 1/2 ounce Peppermint schnapps
  • Ice
  • Blue decorating sugar
  • 1 tbsp Lemon juice

Instructions

  • Pour the decorating sugar onto a flat plate.
  • Use a small sponge dipped into lemon juice from pinch bowl to liberally cover the rim a martini glass.
  • Once covered in lemon juice, turn the glass upside down onto the plate of sugar and spin a few times until the glass rim is completely covered in sugar.
  • Put some ice into the cocktail shaker.
  • Pour in the vodka, crème de cacao and peppermint schnapps.
  • Put the lid tightly on the shaker and shake vigorously for 10 seconds.
  • Pour the finished cocktail into the prepared martini glasses and enjoy!
