We used an artificial sweetener for this recipe but you don’t have to do the same. There were two reasons we swapped sugar for sweetener – we wanted to create a guilt free cheesecake experience and try to make it a little more diabetic friendly (for our sweet Mom) than a regular cheesecake.  

Don’t worry about the texture of the tofu in this recipe, remarkably, the texture stays the same as a regular cheesecake from the very start. Once mixed, the cheesecake it pours easily into the shell and comes out light and creamy.  

4th of July Red White and Blue Tofu and Berry Cheesecake

We love this recipe because not only does it taste great, it’s easy to make with only a few steps. Firstly, create the crust by mixing graham crumbs and melted butter (yum!). Next, put the filling ingredients into the blender and blend completely. Lastly, place it in the oven to bake. Decorate with festive fruits and berries and your set.

Red, White and Blue Tofu and Berry Cheesecake

This cheesecake has a little bit of a twist, it’s made with tofu! It looks and tastes like a regular cheesecake, but packs in protein in a healthy way. Dress it with red and blue berries to make it a festive Fourth of July cheesecake!

Ingredients

• 8 oz cream cheese package, softened
• 1/2 cup artificial sweetener
• 2 egg whites
• 8 oz soft tofu
• 1 box graham cracker crumbs with melted butter, see box for instructions
• 3/4 cup Fresh strawberries sliced
• 3/4 cup Fresh raspberries
• 3/4 cup Fresh blueberries

Instructions

• Preheat your oven to 350F
• Prepare the graham crumb crust by following the directions on the box.  
• Press into a pie pan and set aside.
• To a blender, add the cream cheese, tofu, sugar, artificial sweetener, and egg whites. Blend until smooth, about 1 minute.
• Pour into the prepared pie crust.  
• Bake for 30 minutes or until set.
• Allow the cake to cool before garnishing with your berries and/or fruit.

What You’ll Need:

• Plain coasters (a great dollar store find)
• Colourful, bright paints
• Paint brushes
• Masking Tape
• A fun decal or sticker
• Varnish

How to make Colour Pop Coasters:

Begin by using the masking tape to divide the coasters in half diagonally.

Paint the un-taped half of the coasters and then let dry before removing the tape.

Paint the other side of the coasters with a complimentary colour and then let dry. The painted side can be taped to make it easier, just be sure the paint underneath is absolutely dry or it can be peeled off when the tape is removed.

Finally, add a fun, summery sticker. We found these gold pineapples – which we love! Other inspirations could be flowers, flamingos, Popsicle’s, watermelons, a sun….really anything and everything summery. Finally, finish with a coat of varnish to seal everything in place.

Sit back, relax and then enjoy a drink resting on fun new colour pop coasters, happy crafting!

What you’ll need:

• Plain food tent
• Embroidery threads
• Needle
• Scissors
• Marker

We’ll start with the pineapple. You’ll need yellow, brown and green thread. Start by combining two threads each of brown and yellow. Use a marker to lightly draw a pineapple onto the mesh. Then tie the threads to the mesh and loop it back and forth, creating lines and following the path of your drawing.

Add a single brown thread in a criss-cross pattern over top of the pineapple. Add a some green leaves by sewing random lines on the top of the pineapple, stating wide and then narrowing at the top.

Next is the watermelon. Start in a similar manner to the pineapple, drawing a triangle this time. Cover the curved triangle with a mix of pink and red threads.

Add a green rind and then some black seeds. Make the seeds by sewing 4 or 5 tight lines close together in a few places over the melon slice.

An orange slice is next. Draw a semi-circle with four sections inside. Cover the inside triangles with a light orange thread and then add a dark orange rind around the outside.

The strawberry is similar to the pineapple. Use red thread to create the berry, then add green leaves and small yellow seeds.
