This cocktail is named after strawberry rhubarb pie because its reminiscent of the popular pie filling. We added club soda to give it a perfect fizz, after all, what’s summer without fizzy drinks? It also helps dilute the sweetness of the syrup. If you prefer a sweeter cocktail add syrup to taste. Making the syrup ahead of time is a great idea, then simply store unused portions in jars in the fridge. This recipe makes about 3 cups of syrup. If you’re making it for a group, triple the recipe below and serve in a pretty pitcher.

Time Saver Tip – Make the strawberry rhubarb syrup ahead of time and use it as needed!

Making the syrup for these cocktails takes the longest, yet its still easy. Once you have chopped the strawberries and rhubarb, boil them down with some sugar. Then, using a fine strainer or cheese cloth, strain the pulp to extract the syrup.

Ingredients
  

For the simple syrup

  • 1 lb strawberries stems removed, halved (about 4 cups)
  • 1 lb rhubarb chopped (about 4 cups)
  • 1 cup sugar
  • 1 1/2 cups water

For the cocktail

  • 4 oz strawberry rhubarb simple syrup previously prepared
  • 2 oz vodka
  • squeeze of lemon
  • ice
  • club soda
  • 2 large mint leaves and lemon slices to garnish

Instructions
 

For the simple syrup

  • Add the strawberries, rhubarb, sugar and water to a medium pot.
  • Bring it to a boil, then lower to simmer for about 45 minutes, or until the fruit has broken down.
  • Remove from the heat and allow to cool to room temperature.
  • Use a fine mesh strainer over a medium bowl. Pour the cooled strawberry rhubarb mixture into the strainer, small amounts at a time. Let it sit for a few minutes and then use a spoon to press mixture down to strain completely.
  • Repeat this process (rinsing the strainer as needed) for the entire mixture.
  • Store the remaining fruit pulp in the fridge for future use. Place the syrup to a bottle or jar to store.

For the cocktails

  • Using a glass pitcher, pour over ice, the strawberry rhubarb syrup, vodka, and club soda, add a squeeze of lemon then give it a quick stir.
  • Pour into cocktail or low ball glasses to serve.
  • Garnish with fresh mint, strawberry slices, rhubarb stalks, lemon slices etc.
